I love egg cups! You just don't see them much in the US. It's one of my fond memories of either being in England or in my childhood, a British possession, (Western Samoa).
How interesting. I have never heard of soldiers before. I don't understand eating soft boiled eggs right out of the shells. How do you keep from getting shell into the egg when you break it open?
Aha! Well, I sorta thought the soldiers might be something like that.
My (Irish) wife says the soldiers are for dipping into the egg.
My father used to make sqaure "soldiers." He would cut off the crust of the bread and quarter that, butter them and put them in the oven. Crisp on the outside and soft on the inside.
He also like grits with his eggs, soft-scrambled.
